Ghada / Undhiyu

Ghada is an unique form of cuisine that is similar to Undhiyu prepared in Gujarati culture. In winter season, there are several types of green pulses available easily which actually form the core of this Ghada dish. The combination of vegetables used in this dish is a perfect example of synergy i.e. a perfect blend giving amazing bag of flavors.

Ghada/ Undhiyu created with correct balance of ingredients is a whole meal with loads of proteins. It can be relished with chapati, roti, bhakri and rice. A perfect recipe to cook for many guests and I am sure everyone will enjoy it completely. For this recipe I have used the pressure cooker to speed up the time required to prepare Ghada. However, you can used a thick bottomed utensil for traditional way of making ghada. 

So go ahead and enjoy this winter Ghada / Undhiyu especially for all vegetarians out there!

Ingredients
  1. Brinjal- 1 large
  2. Potato - 250 gms
  3. Sweet potato- 1/2 kg
  4. Konfal / purple yam - 250 gms
  5. Suran/ Yam - 250 gm
  6. Carrot - 250 gms
  7. Rajeli Keli - 6 nos.
  8. Surthi papdi - 100 gms
  9. Makhni papdi - 100 gms
  10. Val papdi- 100 gms
  11. Pauta grains - 100 gms
  12. Green peas - 100 gms
  13. Double beans - 100 gms
  14. Ghevda - 100 gms
  15. Toor beans- 100 gms
  16. Beet root - 250 gms
  17. Grated coconut- 2 cups
  18. Onions- 750 gms
  19. Turmeric - 2 tsp
  20. Red chilli powder
  21. Salt
  22. Oil
Instructions
  1. Clean all the vegetable required in the Ghada.
  2. In an pressure cooker cook all the beans, peas, beet root, potato's, sweet potatoes, carrot, konfal and suran along with salt and turmeric powder.
  3. Then in a separate utensil heat some oil and then let some mustard crackle. After which you add in some finely chopped onions along with turmeric and red chilli powder.
  4. Now cook the brinjal, surthi papdi, makhni papdi, val papdi, rajeli keli and coconut together in the same utensil.
  5. While this time the pressure cooker vegetable must be ready and cooked to perfection.
  6. All you to do now is combine the utensil ingredients and pressure cooker one together to form a homogeneous mixture of Ghada / Undhiyu.
